Corn Cilantro Pesto Topping for Pork Burger

A great topping for a twist on your State Fair Pork Burger – now available at all Marsh supermarkets.

1 cup firmly packed cilantro leaves

1/4 cup firmly packed parsley leaves

1/4 cup grated or shredded parmesan or romano cheese

1/3 cup canned no-salt-added whole kernel corn, drained

2 Tbsp chopped pecans

1 Tbsp chopped shallot

1 Tbsp fresh lime juice

1 garlic cloves, quartered

1/4 tsp salt

4 tsps. olive oil

 

Prepare pesto in a blender or food processor by processing cilantro, parsley, parmesan, corn, pecans, shallot, lime juice, garlic, and salt until well combined.  If necessary, stop and scrape the sides occasionally.

Add oil gradually, processing until well combined.  Additional lime juice can be added to thin the pesto, if needed.

Top your favorite pork burger for a delicious taste!
