Looking for a quick and tasty weeknight meal? The tarragon in this lightened up version of chicken salad brings a unique taste and can be served on a bed of lettuce, a croissant or paired with crackers!
Ingredients:
- 1/3 C plain reduced-fat Greek yogurt
- 1/4 C light mayonnaise
- 1 TB fresh tarragon, chopped
- pinch of kosher salt
- fresh black pepper, to taste
- 2 C shredded chicken, cold
- 1/4 C red onion, thinly sliced
Directions:
Combine first 5 ingredients in a bowl, stirring with a whisk. Add chicken and onion, toss to combine. Enjoy!
This was absolutely delicious. I’ve wanted to make it at times that I cannot find fresh tarragon at the grocery. I don’t have a garden. What would you suggest substituting for the tarragon if I HAVE to. I don’t want to mess with the recipe. I have no choice if I want the chicken salad.
Hi Bonnie! If you can find dried tarragon at your grocery store, that works as well! Because dried tarragon is more potent than fresh tarragon, it is suggested to use less – about a teaspoon for this recipe. This also applies to tarragon replacements, such as dill, dried oregano, or marjoram.
