Turchetti’s Salumeria is a whole animal only, fully inspected salumeria located in Fountain Square Indianapolis, Indiana. Creating old world charcuterie takes thoughtfully sourced ingredients and patience. Our products are all natural from start to finish including pastured heritage breed animals and natural casings. A slow fermentation process allows for a healthy and edible white mold to bloom, which develops our distinct flavor. You can taste the difference.
We take great pride in purchasing whole animals from our small family farms. Animals are vertically seam butchered in our temperature controlled butcher room from a hanging rail. We utilize every part of the animal from bones to organs in an effort to eliminate all waste. We believe through total utilization we are able to give maximum respect for the animal and the farmer. Our whole animal philosophy is reflected in the variety of our 30 products including Smoked Meats, Sausages (Fresh and Smoked), Salami, and whole muscle.
Creating lasting relationships with farmers is at the core of our philosophy. We’re committed to working with only small family farms raising animals the right way. All of our farmers raise heritage breed animals on full pasture with no added growth hormones or antibiotics. Through sustainable farming practices, our farmers are able to produce a healthier, happier, nutritionally dense animal.
